If you are lucky enough to have some leftover bourbon molasses braised duck, then this is the perfect way of utilising some of that delicious saucy meat. If you do not have any left, never fear – any leftover meat could be shredded to be added to the lentils. Or even some refried beans and a little grated cheese. Or the sweet potato and bacon filling from my bagel bombs. The recipe here is more for the dough than anything. The dough itself is flavoured in such a way that it lends itself to the smokey, BBQy flavours of the duck dish, so I would recommend using a little good quality BBQ sauce to coat the meat and lentils before forming the empanadas. Alternately, make sure you have a good dipping sauce if you have a plainer filling.

I make my pastry doughs in the food processor because it’s so much simpler, but it can be done by hand.

Oh, and my New Year's Resolution last year to eat more cornbread was a huge success. This year, I think it might be to practice making prettier looking empanadas!

Smokey Empanadas with Duck and Lentils

2 cups plain flour (‘00’ if you have it)
½ cup cold butter, cubed
½ tsp salt
½ tsp ancho chilli powder
1 tsp smoked paprika
¼ cup bourbon
2 eggs
1 tbsp molasses
1 Egg + 1 tbsp cold water for the egg wash

Filling
400g tin lentils
Few twists of salt and pepper
1 tbsp apple cider vinegar
1 cup shredded duck

Remove the duck from the fridge to take the chill off.

Sift the flour, salt, paprika and chilli powder together and put it in the food processor. Add the butter and pulse until it is combined and resembles breadcrumbs. In a bowl, lightly beat the bourbon, eggs and molasses to combine. Add to the flour mixture and pulse until it comes together into a ball. Don’t overwork it.

Remove the dough, flatten it into a disc, wrap it in plastic and pop it in the freezer for 15 minutes to chill.

Take it out of the freezer, divide it into two pieces and roll each piece out into a rectangle about 5mm thick that you then cut into 4. So when both pieces have been rolled and cut, you’ll have 8 rectangles. Place on lined baking trays, cover with plastic wrap and put in the fridge for 10 minutes while you make the filling.

Rinse the lentils well as they come out of the tin and drain. Place in a bowl, season and add 1 tbsp of apple cider vinegar. Stir to combine, then drain the excess vinegar and measure out 1 cup of lentils. Reserve the rest for another use (I added to a salad). Mix the duck meat into the lentils.

Preheat the oven to 175C

Place around 1 ½ tablespoons of filling mixture along half of each piece of dough, leaving a 5mm-1cm rim around the edge. Brush the rim top and bottom with egg wash, fold the top over and crimp together with a fork. Poke a few air holes with the fork tines and brush the whole thing with egg wash.

Bake for 20 minutes, or until golden.

Serve with greek yoghurt or sour cream

Lance and I both got hit by the flu that was going around. It knocked us around quite a bit and in an attempt to kick it, I started amping up the health-promoting ingredients in all of our dishes. This on top of the lemon, honey and ginger teas we were drinking like they were going out of fashion. One Sunday we were both feeling sorry for ourselves, the sun was shining and I was a bit over the soups. So I made these cold-kicking cream cheese pizzas – full of garlic, ginger, chilli, fresh herbs and lemon and honey squeezed over the top. We sat out in the sun to get some vitamin D and shake off some of the germs and cobwebs from being in bed for a week. 

It felt a lot like the sitting at the pub and having a gourmet pizza that we were missing out on, and it perked us up enough to get back to work the next day.


You don’t need to be sick to enjoy these. But they’re easy enough to cook when you are. I think this is going to make a few appearances over Spring and Summer. Possibly with real, homemade pizza bases!

Herbed Cream Cheese and Prawn Pizza


100g peeled raw prawns
4 lebanese loaves
250g Philadelphia cream cheese
2 bunches coriander
1 bunch parsley
2 cloves garlic, peeled
1 tsp red chilli, minced
1 tsp grated ginger
¼ tsp salt
Handful bean sprouts
1 tbsp capers
Handful rocket
Lemon wedges for serving



Preheat the oven to 170C


Throw your cream cheese, coriander, parsley, garlic cloves, chilli, salt and ginger in a food processor. Pulse until it’s all chopped up and evenly combined.


Spread over the Lebanese loaves, then distribute the prawns, capers and bean sprouts. Pop in the oven and cook for 20 minutes until the prawns are pink and the cheese is getting golden at the edges.


Serve with a handful of rocket on top, then drizzle over some honey and add lemon wedges.
Even better with a beer or crisp white wine

Clinging on to the Heat - Chili and Barley Stuffed Pork Rolls with Mango Sauce



A few years back now I received the Readers’ Digest Kitchen Garden Cookbook as a Christmas present. It’s quite a fun little cookbook, divided into sections by food plants that grow easily in backyard gardens in Australia. It gives you a rundown of when to plant, what climate it works best on and then a handful of recipes that use that plant. One of my favourite recipes from that book is chilli stuffed pork fillets with raita. This is an adaptation of that recipe, using a mango sauce to provide a sweet contrast to the heat of the chillis, rather than the cooling raita. I also added barley to the stuffing to make it a more filling meal, rather than make a separate side dish.
 
I used two jalapenos and didn’t remove the seeds, as mine weren’t particularly hot peppers. My bush (tree? Shrub?) provides really inconsistent heat in each peppers, so I have to taste them individually before adding to a recipe! Feel free to take the seeds out depending on your own heat tolerance.

I used my own mangoes, but feel free to use frozen mango cheeks, given we're not in the right season anymore.
 


Chili and Barley Stuffed Pork
200g pork fillet
¼ cup cooked pearl barley
2 jalapenos, finely diced
1 cup finely chopped coriander, basil and mint.
Salt and pepper to season.
1 tbsp olive oil.

Mango Sauce
2 mangoes, diced.
2 tbsp dark rum
1 tbsp butter
½ tsp salt
 
In a small saucepan, melt the butter over low heat. Add the mangoes, rum and salt. Mix well, turn the heat up to bring to the boil, then lower and leave to simmer while you make the rest of the meal. Stirring here and there to make sure it’s not sticking to the bottom.
Slice your pork fillet into two, lengthwise, to make two thinner fillets. Cut each of those into 3 pieces, giving 4 rectangles. Season on both sides.
 
In a small bowl, mix the barley, jalapenos, and herbs. Place a tablespoon or so on each piece of pork and roll up tightly. Pin together with a toothpick.
Heat the olive oil in a frypan to medium-high heat. Carefully place  the pork rolls into the frypan and cook for a few minutes on each side, until nicely browned. You’ll need to rotate around 4 times to brown the entire roll.
 
Serve with the mango sauce and a side salad

Birthday Meals - Fig and Apple BBQ Pasta Sauce


My husband and I both tend to have birthday week, at least. Sometimes birthday month. We generally don't buy each other presents unless there’s something specific we find (this is true for all gift-giving occasions). Instead it becomes a week or so full of birthday-related activities. This year, his parents threw their annual party. The day of his birthday I met his boat after work and we had tapas and beers at Monk Brewery with a few friends and the next day I cooked him this for dinner for his Birthday + 1. I had told him I wanted to cook him something special for his birthday and he told me he doubted I could. Everything I cook was special. Bless him.

We are both big fans of ribs. Sticky, BBQ sauce smothered ribs. Preferably smokey. Along with my collection of hot sauces, I have a handful of different BBQ sauces in my pantry, too. I was thinking about how they all have a similar base flavour, and started contemplating what it was that makes a BBQ sauce taste like a BBQ sauce. Basically it’s a combination of sweet, salt and vinegar. The ‘sweet’ is usually fruity. And then it’s got some spice in there. Pretty simple, really. I knew I didn’t have enough time to come home from work and cook ribs (they are so much better slow-cooked), but I still wanted that sticky sweet sauce. I got it in my head to make a pasta, but didn’t want to just use a BBQ sauce from the bottle because they tend to be a bit ‘much’ in large quantities. The vinegar and sugar can take over.

I had been given a few sundowner apples from my parents’ after an orchard trip. I’m not the hugest fan of them to just eat, I find they can be a bit ‘floury’. I like my apples tart and crisp – like pink ladies, or fujis. But, I thought they’d make the perfect sweet base for a BBQ sauce. I added some figs, because I had some. You can always substitute another apple, or maybe a few nectarines or peaches seeing as they’re in season. To me, the sauce turned out perfectly and Lance swears up and down that it wasn’t BBQ sauce but was delicious. I asked him what it tasted like and what BBQ sauce tasted like. He repeated back all of the same flavours for both. What was ‘missing’ was it being further reduced to concentrate the flavours like the traditional condiment – but this was the reason I didn’t want to just use a bottled sauce in the first place. So, I am going to make this again, but cook it in my slow cooker for a few hours to reduce it further, then puree it to make a condiment BBQ sauce. And as a compromise, I am calling this a BBQ Pasta Sauce instead of just a BBQ sauce.

To make the pasta, I had some beautiful little yellow squash and zucchini, then some leftover roast beef that I shredded. Some pork or chicken would go well, too. Then I added a tonne of basil and flat leaf parsley at the end. I wanted it to be more of a vegetable than a herb.
 
This recipe has a lot of ingredients, but most of them are spices, so don’t get too overwhelmed by that. For me, they are all pantry staples. The mustard seeds and cumin seeds I measured before I toasted and ground them. If you have pre-ground spices, then you’d probably need a little less.



Fig and Apple BBQ Pasta Sauce
(serves 4-6)
2 shallots
4 cloves garlic
2 apples
6 figs
1 shot bourbon
2 tsp sweet paprika
2 tsp smokey paprika
1 tsp chipotle chili powder
2 tsp salt
1 tsp mustard seeds
2 tsp cumin seeds
½ tsp pepper
2 tbsp honey
1 tbsp Worcestershire sauce
1 cup water
½ cup apple cider vinegar


Assembling the Pasta
6 yellow squash, diced
1/2 zucchini, diced
1 cup shredded cooked beef
Bunch basil leaves, roughly torn
Bunch flatleaf parsley leaves, roughly torn
500g egg noodles


In a large, tall sided pan (I used my tagine pan) on a low heat, add the olive oil and when it’s warmed up, add the shallots and garlic and sautee for about 5 minutes until translucent. You don’t want to colour them, you want it sweet and soft. Then add the apples, figs, salt and bourbon. Stir well, then cover and leave to simmer around 10 minutes while you prep the rest.

In a dry pan, toast the cumin and mustard seeds for 15-30 seconds until the mustard seeds ‘pop’. Add to a spice grinder or mortar & pestle with the peppercorns and grind until fine. Add the two paprikas and chili powder to the spice mix. Mix together the water, Worcestershire sauce, apple cider vinegar and honey. Pour into the apple mixture. Add the spice mixture into the pan as well and mix everything really well. Cover again and simmer away for at least 20 minutes. The fruit should break down and go mushy turning into a delicious sticky sauce. Check for seasoning.

Meanwhile, place a pot of salted water on to boil for the pasta. Cook according to packet instructions. Add the squash, beef and zucchini to the sauce and cook until warmed through and the vegetables have softened – 10 minutes. Add the pasta when al dente, and the herbs, and stir through. Serve!

Romantic Summer - Salmon Ceviche Brulee


Along with our wedding anniversary, Lance and I still like to acknowledge our ‘dating’ anniversary. We’re both fairly romantic folk, so it gives us another opportunity to celebrate us. We just passed our 6th anniversary of our first date. That first date was Epic. With a capital E. With castles and flying roses and passionfruit wine and dancing. It was seriously wonderful and thinking back over that night and everything that has happened between us in those last 6 years makes me all warm and fuzzy. That first night, we had sushi for dinner (something that Lance had not been a fan of before we became friends and I showed him how good it can be) and as a nod to that, we went to a wonderful Omakase and Teppenyaki restaurant in Mosman Park – Fu Ku. It’s a little pricey, but the food is incredible, so if you like Japanese and want somewhere to go for a special occasion, I highly recommend it! But, seeing as I always have recipe ideas running around in my head and things I want us to try, I thought I’d also make Lance a special meal for our anniversary too.

Given the recent heatwave we’ve been having in Perth, a lot of the dishes I have on my ‘to-cook’ list are ruled out as either too heavy to want to eat, or too labour intensive to want to cook. Which lead me to ceviche. We both love ceviche. We had it often on our last US trip, and since coming back we’ve found it popping up on menus around Perth. Don Tapa in Fremantle and El Publico in Highgate both do great ceviche. And it is so incredibly simple. Whilst you can get all fancy about the ingredients, essentially all you need is fresh seafood and citrus juice to “cook” it. On our last day in New York City, Lance and I went to a fantastic Peruvian restaurant that served a few different types of ceviche including what they called Salmon Brulee. A salmon ceviche formed into a neat square, with a layer of cream cheese on top, and a very thin layer of sugar that had been caramelised to a crisp on top. It was so unique and so delicious. So I decided to make a version of that for Lance.

I kept the whole thing very basic for my first attempt and the result was so good. Using my current citrus favourite - grapefruit and a cheeky little shot of Gin. You can substitute the grapefruit juice for lime or lemon (or a combination). And omit the gin if you're not into it - but I think the flavours go particularly well. I served this with a mango salad on the side, and used some of the marinading liquid to ‘dress’ it (this liquid is called Leche de Tigre in Peru and is considered a potent aphrodisiac AND hangover cure!). And a few home made tortilla chips. I also kept the pieces chunkier for my first attempt - nice and rustic. If you are like us, kind of romantic but looking to keep things fairly low-key with dinner at home on Valentine's Day, this is a fantastic quick and impressive dish for you to share with that special someone.
 


Salmon Ceviche Brulee
250g skinless salmon steaks
Grapefruit juice from one large grapefruit (around ¾ cup)
1 shot (30mL) gin (I used Gin Mare because of it’s olive flavours)
1 jalapeno, finely minced
1/4 tsp good sea salt
100g cream cheese
2 tbsp white sugar
 
Mango Salad
2 medium mangoes
2 roma tomatoes
½ sweet paprika
1 small Lebanese cucumber
1/3  Leche de Tigre (from the ceviche)
 

Finely slice the salmon portions (the smaller you cut it, the less time it’ll take to ‘cook’). Sprinkle with salt. In a glass bowl, add the grapefruit juice, gin and jalapeno. Add the salmon and mix well. Cover with plastic wrap and put in the fridge to cook. As a minimum, 30 minutes. Up to a few hours before you’re going to serve it.

Using a cutter, form a disc (or shape of your choosing) of cream cheese 1cm or so thick. Sprinkle a fine layer of sugar over the top and carefully unmold without pulling the sugar off with it.

To make the salsa – finely chop all of the ingredients and set aside until ready to serve.

When the ceviche is ready, strain through a sieve and reserve about 1/3 cup of the juice. Pour this reserved liquid into the mango salsa salad and mix well.

Form the salmon into a pile, carefully slide the cheese disc on top and use a brulee torch to burn the sugar on top.
 
Serve immediately with some fresh tortilla chips

Community Inspiration - Chilli Fig Jam with Chorizo tacos


So you might be looking at this and thinking, really? ANOTHER fig recipe? But they’re in season, they’re plentiful and they’re currently being supplied to me for free from a friend’s tree. So I am using them in everything. And loving every single dish of them! And as they are in season, they’re popping up on my Instagram feeds quite frequently and one that caught my eye was from Perth Breakfast – she was making a fig and chilli jam. Um…yum! Two of my favourite things in a jam! Something I was definitely going to try!

As you probably know by now if you’ve read this blog a few times, I am more than slightly addicted to tacos. So my mind immediately went to tacos for a good use of said jam. So beyond the fig jam, the next idea of these was to use a big range of textures. So you have the chewiness of the chorizo, the soft, squishiness of the zucchini, the pop of the corn kernels the crunch of the peanuts and the stickiness of the jam (is stickiness a texture??), the smoothness of the cheese and the crispness of the cucumber. All at once. And it was wonderful.

I used venison chorizo because I have a stockpile in my fridge. When we head down south for a weekend, we tend to stock up on a few products without fail. Venison chorizo, chilli beer sticks and kangaroo biltong from the Margaret River Venison Farm are high on that list. Being venison, it has a more intense flavour than standard chorizos, slightly gamey but not super obviously gamey. If that makes sense? It’s perfect for adding sweet flavours like fig jam to. But any chorizo you’ll have will work. I also served it with the jam still warm. Do this. It blends in with the cheese better as you eat it.
 
I was deliberately light on the chilli in the jam for two reasons. Firstly, the chorizo already has a heat to it and I didn’t want to overdo the spice, but for all other purposes, I think I would prefer it hotter. And secondly, the jalapenos I used are from my own shrub and they are so inconsistent in their heat. Some are basically capsicum, some will knock your head off – I tend to err on the side of caution. I’m sure you know your own tolerance, add the chilli to your tastes. As per our Instagram conversation (and because I prefer natural sweeteners) the jam is sweetened with honey rather than white sugar. And traditionally, you would add some water but this I deliberately wanted super sticky and thick. You can add a cup of water to make a runnier jam.



Chilli Fig Jam
(makes one 300g jar)
10 figs, cut into 1cm pieces
2 jalapenos, de-seeded and minced
2 tbsp apple cider vinegar
¼ cup honey

First up, make the jam. Add the figs, jalapenos, vinegar and honey to a small pot, bring up to a medium low heat and allow to simmer away for half an hour so until the figs start breaking down and the texture goes all jammy. Around half an hour or so. Bottle in a clean glass jar when still hot.

Spicy Peanuts
1 tsp butter
½ cup raw peanut kernels (no skins)
¼ tsp cumin seeds
¼ tsp smokey paprika
Pinch sea salt

Heat a frypan, melt the butter and throw the peanut kernels in, toss around for 2-3 minutes. Add the cumin seeds, paprika and salt, toss everything very well to blend. When the cumin seeds are at the ‘popping’ stage, the peanuts should be slightly brown and toasty. Remove to a serving bowl and allow to cool.

Chorizo Tacos
(serves 2)
1 chorizo sausage (around 250g)
1 medium zucchini, diced
½ cup corn kernels (fresh or frozen)
handful chopped coriander
To serve
Tortillas, cucumber strips, fetta (try get one that’s smoother rather than dry and crumbly)

In the same frypan as above, add the diced chorizo pieces. Leave to fry 5 minutes or so for them to render out some of their fat and start to get crispy. Add the zucchini and corn, and cook for a further 5-10 minutes or so until the zucchini is cooked. At the end, stir through the coriander.

Serve all immediately with warmed tortillas.
