Remember my badly photographed DIY Slider Bar party that my friend and I hosted last year? We had 4 different types of burgers, with a table full of salads and condiments so you could build your own set of sliders. And it was brilliant. One of the slider options we had that day were prawn burgers. And that same prawn patty is still my favourite non-beef burger. And it’s probably my most made burger at home. I’m not going to lie, this recipe is really, really similar to the KrabbyPatties recipe that I posted last year. But these prawn burgers are where it all started. These are my favourite burger patty. The sweetness of the prawn, the smokiness of the paprika. I love mango added into that flavour profile, but instead of a mango guacamole, I made a simple mango tomato salsa to go with it. Lance has been growing me some grape tomatoes and they are no good for slicing up into burgers, but make for a delicious condiment in them!

It was crazy hot the day I cooked these, so they were done outside on the BBQ. You do need to add a little oil to your cooking surface. I don’t always bother when BBQing, but prawns are practically devoid of fat, so it helps to make a nice crisp outer layer and stop it sticking. Something that’s not as big a deal when cooking beef or lamb patties.

Mango Tomato Salsa

1 small mango, diced
Half punnet grape tomatoes, diced
2 chipotle pepper, finely chopped
Pinch salt and pepper
Juice of one lime

Mix all ingredients together. Set aside for the flavours to meld while you cook your burgers.

Prawn Burgers

(makes 6 patties)
500g prawns
1/2 cup panko breadcrumbs
1/2 cup coconut flour (or fine shredded coconut - unsweetened)
1 egg
2 tbsp dijon mustard
2 garlic cloves, minced
1 tsp salt
1/2 tsp black pepper
1/2 tsp basil
1tsp smoked paprika
to serve
6 buns (toasted, if desired)

salad ingredients
mango tomato salsa

Dice the prawns into small pieces and throw in a bowl. Mix the mustard, garlic, salt, black pepper and basil until all the prawn pieces are well coated. Mix through the egg to get everything wet, and finally add in the breadcrumbs and coconut.

Divide into 6 equal portions and, using clean hands, form into round patties and squish to flatten. Set aside in the fridge for 30 minutes.

Heat a pan or BBQ plate to medium high and lightly coat with oil. Cook each patty for around 5 minutes, or until golden. Flip over and cook for a further 3-5 minutes until cooked through.

Serve with Mango Tomato Salsa and your favourite burger ingredients.

Thanksgiving in a Bun - Turkey and Cranberry Burger

I watched all the traditional Thanksgiving dishes come and go on pinterest and then Instagram as people in the Northern Hemisphere started their holiday period. Obviously, it's not a holiday we have down under, and it's Spring/Summer here, not Autumn/Winter, so the flavours and style of food aren't necessarily seasonal at the moment. But it doesn't stop me drooling! Luckily the Perth climate means a lot of things do grow year round, like butternut pumpkins. 

So, in the spirit of the holiday we don't have, I created these burgers which is like a whole Thanksgiving dinner in a bun. The patties have turkey and cranberry and I've paired it with a roast pumpkin slice. The patties are also gluten free, using the nutty flavour of chick pea flour sees to that.

Easy to make, easy to eat, and great in warmer weather. As with most of our meals, I didn't have any buns when I made these, so I served in bread rather than buns. But buns would be better. Use buns.

Turkey and Cranberry Burgers

1 red onion, diced
1/2 tsp salt
generous twisting of pepper
1/2 tsp dried thyme
2 cloves garlic, minced
1/4 cup dried cranberries
1 cup chick pea flour
1/2 butternut pumpkin, sliced in to rings


to serve
red cabbage
pickle
fetta
mayonnaise
bread or buns


Shred the cabbage and pickle and mix together. Cover with a few tablespoons of the pickle juice and set aside to soften the cabbage a little.

In a frypan on medium heat, heat a little oil and add the red onion, salt and pepper. Sweat the onion until it's translucent. Add the garlic and thyme and cook for a further 5 minutes. The onions should be golden at this point. Add the dried cranberries and 2 tbsp water, stir it all together and cook until the liquid has cooked off. Set aside in a bowl to cool.

Mix the turkey mince into the onion mix. Add the chick pea flour, starting with half a cup and adding more as required to create the correct consistency.  Form the mixture into patties and set aside in the fridge to cool and 'set' for half an hour.

Brush the butternut pumpkin rings with oil and cook for 10 minutes on each side in the same pan, or until soft. Set aside, and cover to keep warm.

Add a little oil to the frypan and, without crowding the pan, cook the burgers. 5-10 minutes on the first side, then flip when golden. Cook for a further 8 minutes or so until cooked through.

Assemble the burgers, adding your favourite sauce if desired and enjoy.

Fusion Flavours - Carrot and Nori Fritters with Wasabi Coconut Cream


I am a huge fan of Japanese cuisine – but it’s not something I’ve really had a great deal of experience cooking. Apart from the odd okonomiyaki and teriyaki here and there, most of my Japanese eating has been out at restaurants. But I had a craving for Japanese, a few sheets of nori left over from a failed cauliflower rice sushi experiment  and a couple of sachets of wasabi floating around from my last takeaway. I didn’t have a great deal of veges left in the fridge, which is where the rest of the main ingredient inspiration came from – carrots. I always buy carrots…but I very rarely actually cook with them. They usually only ever get chopped up into salads or munched on raw (with almond butter and dukkah). So given they’re not my go-to vege, I often end up having lots in the fridge. It was time to try carrot fritters/okonomiyaki.

To serve, I made a wasabi coconut cream. Mainly because I wanted to temper the heat of the wasabi, as my husband isn’t the hugest fan, and I didn’t have any greek yoghurt – which is what I normally would’ve turned to first. Not shopping can provide so much inspiration! We had just come home from a trip fishing on the Blackwood River on Molloy, so I also had fresh bream fillets to serve with it which you will see in the photos – but they are flavoursome enough to be a vegetarian meal on their own. Slightly sweet, delicious, crispy little things that they are!



Carrot and Nori Fritters
5-6 baby carrots
1 tbsp cornflour
1 sheet of Japanese nori/seaweed
2/3 cup plain flour
1 tbsp of corn flour
1/4 tsp of salt
2 egg whites
1 cup cold water
oil for frying

Wasabi Coconut Cream
1 tin coconut milk, refrigerated overnight
2 sprigs coriander, leaves removed and shredded
Pinch salt
1-2 sachets wasabi (or a 2-4 cm squeeze from a tube)

Preheat the oven to 150C for keeping cooked fritters warm whilst you cook the remainder.

Grate the carrots using a coarse grate. (I do this in my food processor). Use a pair of kitchen scissors to chop the nori up into thin strips. Mix the carrot and nori together and toss through 1 tbsp cornflour.

In a separate bowl, whisk together plain flour, the second tablespoon of cornflour and salt. Whisk the eggs gently and add the cup of water to the eggs, mix together. Pour this batter over the carrot mix and gently fold together until it comes together. Don’t overmix it.

Heat a frypan to a medium-high heat. Add a layer of oil to the pan and allow to heat as well. Ladle the mixture into the pan to form fritters to the size of their choosing. I like pikelet size ones – around 10cm diameter. Cook for 2-3 minutes until crisp and golden. Flip over and cook for a further 2-3 minutes. Remove to a plate and keep warm in the oven.

Meanwhile, pour the thin watery layer of the coconut milk off and reserve for another use. Beat the wasabi and salt to taste into the remaining cream with a hand beater. Stir through the coriander.
 
Serve alongside the carrot and nori fritters

Skamp's Krabby Patties


Watching cartoons is a guilty pleasure of mine. Despite being 31. I love old kids cartoons. I love Disney movies. I love adult cartoons like Archer. I love Spongebob Squarepants. Here’s a photo of me meeting Spongebob and Patrick Starr back in 2011.

So when we went for our annual crabbing trip and we caught our full quota this year and I was thinking of the different ways of cooking with the crab, I decided one dish would be Krabbie Patties (which I’m pretty sure are actually beef in the cartoon). This is just a slightly different take on the prawn burgers I made as part of my Tapas Sliders Night (seriously, need to do another one of those!) and as such, if you don’t have crab meat you can substitute it with much-easier-to-find prawn. One day, I will get around to posting that recipe. It’s delicious. And those I usually serve with a mango salsa. So this I served with a mango guacamole.

I served these with bread to make sandwiches/burgers (I didn’t have buns at home but a nice soft bun would’ve been better), and then the next night we had tacos with the leftovers. It made 6 patties.

 

Skamp’s Krabby Patties
2/3 cup panko breadcrumbs
¼ cup cornmeal
½ tsp smokey paprika
1 large clove garlic
1 ½ cups crab meat
2 eggs
2 tsp wholeseed mustard
1 sprig parsley
Salt and pepper (about 6-8 grinds of each)

Mango Guacamole
Avocado
Mango
Jalapeno
Salt & pepper
Juice from one lime

For the patties, put the eggs, mustard, garlic, paprika, parsley and salt and pepper into a large bowl and whisk to combine. Add the cornmeal and panko and stir through. Gently fold through the crab meat, so you don’t break the pieces up too much. If the consistency is too wet, add a little more panko. Wet your hands, then form patties about palm size. Put on a plate and leave to ‘set’ for about 15 minutes. Enough time to make the guacamole.

Peel and de-seed the avocado, add to a heavy bowl with salt and pepper and lime, then mash with a fork to make as smooth or chunky as you like. Diced the mango and slice the jalapeno (remove the seeds/membranes if you don’t want it too hot) and stir through. Set aside.

Heat a frypan to medium high heat and add a thin layer of rice bran oil or other neutral oil with a  high smoke point. Allow the oil to heat, then carefully slide a few of the patties into the hot oil (don’t overcrowd the pan). Cook until golden, about 5 minutes, then flip and cook for another 5 minutes. Drain on paper towels and cover to keep warm while you do the next patties.
 
Serve with buns/bread of your choice, salady ingredients and the mango guacamole.
