Lance doesn’t like sorbet. In fact, when he saw me pouring this mango mix into the ice cream maker, we had a conversation a bit like this:



“Ooh, you’re making me ice cream! What flavour are you making?”

“Not ice cream, something different”

“What? Hang on, are you WASTING our mangoes making sorbet? You don’t love me!”



And yet, there I was, making sorbet for us as part of our date night dinner. Now, I see what you’re thinking  - maybe he’s right. Maybe if I know he doesn’t like sorbet but I’m still specifically making it for an important meal – then maybe I don’t love him. First, how dare you question my love! Secondly, remember the pie incident?
Yeah. And remember our Wills Domain Degustation? Lance loved the herby sorbet palate cleanser.

I would never serve Lance a sorbet for dessert. Nor would I serve him a nut milk ice cream, or coconut milk ice cream for dessert. This sorbet? Not a dessert. This sorbet is an entrĂ©e (or appetizer, for my American readers! Hi!) Riffing on the herby sorbet we both loved, I decided to make a more ‘savoury’ sorbet that would in essence be the sauce for a fun spicy and fruity prawn cocktail. Using some of our homegrown mangoes and jalapeno, I added some tamarind for a tart hit. Served with some cold prawns that are dusted with some smokey hot paprika and the traditional iceberg lettuce bed, it was quite the cute little dish. And a perfect date night/dinner party appetizer as everything can be made in advance. Just churn the sorbet right before you want to serve it.

Mango Tamarind Prawn Cocktail Sorbet

2 cups water
5 tsp tamarind puree
¼ tsp pepper
½ tsp salt
2 jalapenos
3 mangoes, flesh removed
1 egg white
cooked, cooled prawns (6 or so per person)
iceberg lettuce, shredded to serve
hot smoked paprika, to serve

Finely mince the jalapenos and add the mangoes, water, tamarind puree, salt, pepper, jalapenos and egg white and blend until fully homogenised. Leave for 5 minutes to allow some of the air to leave the mixture, and then give one quick stir before pouring into your ice cream maker. Churn for 30-45 minutes, depending on your machine's instructions.

Place lettuce on your serving plate/bowl. Scoop a ball of sorbet on top of the lettuce, arrange the prawns artfully and dust with smoked paprika. Serve immediately.

Leftover sorbet can be tightly wrapped in the freezer for a week. Soften in fridge 30 minutes before serving like this again. Alternatively, blend up with a little tequila for a killer cocktail!

I don’t have much to say about this recipe, other than I had a bag of lovely baby carrots from the Nanna Shop. And I had a one lone mango left from my tree. And I was reading a book on Moroccan and North African cuisine. It all sort of just happened, from there. Cumin, fruit and vegetables. Simple, but tasty. Like a mango-ey version of honey roasted carrots. If you can, toast some cumin seeds in a pan and grind to a powder yourself.

This is a sweet vegetable dish, so it’s a perfect accompaniment to richer, fattier meats like lamb. And drier style wines. We ate it with toasted tortillas, Greek yoghurt and lamb sausages. All in all, a very nice enjoyable meal.

I had leftovers with a poached egg the next day for lunch.

Cumin Mango Roast Carrots

500g baby carrots, scrubbed
1tbsp olive oil
1 mango, peeled, sliced
¼ tsp ground cumin
¼ tsp ground cinnamon
1 jalapeno, finely sliced
Generous sprinkling sea salt and fresh black pepper

To serve:
Toasted pistachios, roughly chopped
Sesame seeds (I used black, but white are fine too)
Sprig of coriander, leaves removed and finely chopped
Drizzle balsamic glaze

Preheat the oven to 170C

Make sure the baby carrots are approximately the same thickness, so cut in half lengthwise if necessary. Drizzle with olive oil, the cumin, cinnamon and season well with salt and pepper. Toss to coat. Add the mango and jalapeno and toss gently. You don’t want to break the mango up too much.

Roast for 20-25 minutes, or until mostly tender, turning at around the half-way mark and coating the carrots in the mango that’s broken down.

Turn up the oven to 200C and cook for a further 5-10 minutes, so the sugars caramelize a little.

Remove from the oven, drizzle with balsamic glaze, sprinkle with the nuts, seeds and coriander.

Sometimes you need pizza. There’s no way around it. And it has to be real pizza. A real dough base, not just the usual cheat method of using a Lebanese loaf and spreading on your toppings. And then you need a beer and to sit outside in the fresh air and sunshine with your pizza and your husband and reflect on how good life can be. That despite being bone tired from a long and hard crabbing session that was mostly fruitless (although eating the crab hot out of the pot that night with fresh bread and butter still made it feel worthwhile), an afternoon of good food, good weather and good conversation is all it takes to get over the exhaustion.
 
This is a pretty simple dough that was made a bit more exciting (not to mention good-for-you) through the addition of two types of pulse flour. I had a little bit of lentil flour left over from my Secret Cake Club baking, and added some chick pea flour to total half the flour. You could use all chick pea flour seeing as that is pretty easy to get, but making your own lentil flour is pretty easy if you’ve got a coffee grinder. In which case, you could also use all lentil flour. As with my baking experimenting gone awry, the addition of a little arrowroot powder ensures the dough binds properly. The molasses in place of the normal sugar adds a smokey sweetness to the nuttiness that the beans bring. Leave it to proof for half an hour while you make the sauce and chop some veges and it’s a pretty quick way of getting a real pizza base in your life.
 
This makes two just-bigger-than single serve pizzas, by themselves enough for around 3 serves. Or 4 serves if you have a side salad. The toppings are fairly easy to change in and out of the sweet and spicy cream cheese sauce. Mine were what were to hand. Although the sauce and lentil base is flavoursome enough that the toppings play textural counterpoint as much as anything. Fresh greens on top are one of my favourite things to do with pizza, you could probably get away with just that.

Pulse Flour Pizza Base

½ cup lentil flour
½ cup chick pea flour (or one cup of chickpea flour)
1 tbsp arrowroot powder
1 cup plain flour
2 tsp yeast
1 tsp molasses
½ teaspoon salt
2 tbsp olive oil
2 tsp cornmeal

Ras el Hanout Mango Ricotta Sauce

150g smooth ricotta
1 mango
2 tsp ras el hanout
2 cloves garlic
2 tsp tamarind puree

Toppings

¼ roast chicken, meat shredded
¼ zucchini sliced into thin rings
½ red capsicum, sliced into thin strips
Snow pea shoots
 
Mix the flours together in a large bowl with the salt and yeast. Make a well in the centre and add the olive oil, warm water and molasses. Stir the liquids together first, then slowly bring in the flour until it becomes a shaggy mess. Knead for around 5 minutes until it forms a smooth ball. Pop in an oiled bowl and cover loosely with plastic wrap and set aside to double in size.
 
Meanwhile, mince the garlic, dice the mango and mix all of the sauce ingredients together until well combine. Slice your toppings as desired. Heat your BBQ or oven to 160C
 
Punch down the dough to remove some of the air, then divide the dough into two. Roll the each ball of dough out to around 2cm thickness. Sprinkle 1 teaspoon of cornmeal on two baking trays and lay the pizza bases on top. Cover with toppings and bake in the oven, or on a lidded BBQ for 15 minutes or until base is golden at the edges and the cheese mixture is browning.

Our mango tree that was so incredibly prolific last year, hasn’t been as fruitful this year. There are probably less than a quarter of them than last year, and we lost quite a few of those before they got anywhere near size. So when 4 green but still fairly mature mangoes fell, I decided to use them. I want my mango fix! I haven’t had a great deal of green mango dishes. Here and there there’s been green mango salads accompanying spicy Asian dishes but that’s about it. These salads are usually wonderfully tart and salty. The green mango very sour in comparison to the crazy sweetness of a ripe mango. And the salt tames the sour and brings out more of the fruit flavour.

With that idea in mind, I created this pasta. I was in the mood for gnocchi, not sure why, but I was. And I had half a roast chicken leftover from the night before’s dinner. Summer corn is plentiful and cheap at the moment, so that was going to be added. I thought I’d then round it out with a combination of ginger and coriander as a tip of the hat to the Asian green mango dishes and dark rum as a tip of the hat to the tropical feel of mango. And it worked so well! Salty chicken, sour green mango, sweet corn all working together with the rum to coat the soft pillows of gnocchi.

I only used two of our green mangoes, but I think I’ll use the other two to just repeat this dish!

Chicken and Corn Gnocchi with Rum and Green Mango Sauce

(serves 3-4)
2 tbsp coconut oil
1 brown onion, sliced
3 cloves garlic, mince
Thumb size piece of ginger, peeled and thinly sliced
2 green mangoes, flesh cubed
50mL dark rum
100mL water
1 tsp salt
Kernels from 3 corn cobs
½ cooked chicken, meat shredded
½ red capsicum, sliced
1 packet pre-cooked gnocchi
Handful coriander leaves, chopped
Green chilli, sliced into rings


Heat the coconut oil to medium heat in a frypan. Add the onion slices and half the salt. Leave to cook, stirring here and there so they don’t stick for around 10 minutes, or until lightly browned and caramelly. Add the garlic and ginger and cook until the garlic is translucent, around 2 minutes. Add the rum and simmer until reduced by about half and slightly sticky. Add the mango and corn and stir well to coat everything. Simmer until the corn is tender and the rum has reduced to the point where the corn is sticking to the pan in parts.

Add the water and remaining salt and stir to pick up any brown bits stuck to the pan and create a more cohesive sauce. Add in the chicken, capsicum and gnocchi, stirring well to coat in the sticky sauce and veges. Cook 5 minutes until the chicken and gnocchi are warmed through. Just before serving, stir through the coriander leaves and garnish with chilli slices.

Remember my badly photographed DIY Slider Bar party that my friend and I hosted last year? We had 4 different types of burgers, with a table full of salads and condiments so you could build your own set of sliders. And it was brilliant. One of the slider options we had that day were prawn burgers. And that same prawn patty is still my favourite non-beef burger. And it’s probably my most made burger at home. I’m not going to lie, this recipe is really, really similar to the KrabbyPatties recipe that I posted last year. But these prawn burgers are where it all started. These are my favourite burger patty. The sweetness of the prawn, the smokiness of the paprika. I love mango added into that flavour profile, but instead of a mango guacamole, I made a simple mango tomato salsa to go with it. Lance has been growing me some grape tomatoes and they are no good for slicing up into burgers, but make for a delicious condiment in them!

It was crazy hot the day I cooked these, so they were done outside on the BBQ. You do need to add a little oil to your cooking surface. I don’t always bother when BBQing, but prawns are practically devoid of fat, so it helps to make a nice crisp outer layer and stop it sticking. Something that’s not as big a deal when cooking beef or lamb patties.

Mango Tomato Salsa

1 small mango, diced
Half punnet grape tomatoes, diced
2 chipotle pepper, finely chopped
Pinch salt and pepper
Juice of one lime

Mix all ingredients together. Set aside for the flavours to meld while you cook your burgers.

Prawn Burgers

(makes 6 patties)
500g prawns
1/2 cup panko breadcrumbs
1/2 cup coconut flour (or fine shredded coconut - unsweetened)
1 egg
2 tbsp dijon mustard
2 garlic cloves, minced
1 tsp salt
1/2 tsp black pepper
1/2 tsp basil
1tsp smoked paprika
to serve
6 buns (toasted, if desired)

salad ingredients
mango tomato salsa

Dice the prawns into small pieces and throw in a bowl. Mix the mustard, garlic, salt, black pepper and basil until all the prawn pieces are well coated. Mix through the egg to get everything wet, and finally add in the breadcrumbs and coconut.

Divide into 6 equal portions and, using clean hands, form into round patties and squish to flatten. Set aside in the fridge for 30 minutes.

Heat a pan or BBQ plate to medium high and lightly coat with oil. Cook each patty for around 5 minutes, or until golden. Flip over and cook for a further 3-5 minutes until cooked through.

Serve with Mango Tomato Salsa and your favourite burger ingredients.
