Quick Post - Grilled Honeydew and Corn Salsa


One of my favourite new cooking-based discoveries this summer – after cold-brewed coffee – is grilling melon. Sure, chilled melon is super-appealing on a hot summers day. Not to mention fruit slushees and icy poles and whatnot. It’s seriously refreshing. But grilled melon now has a special place in my heart, too. My favourite melon to grill is the honeydew melon. The heat intensifies the sweetness and caramelises the outside. Perfect to add to a summer salad. Or just by itself, sprinkled with a tiny bit of salt, chili flakes and sumac. Or in this salsa

I served this texturally diverse salsa alongside some of leftover lentil patties for a quick and delicious weekday dinner. It’d also go really well served alongside tacos or in burgers.

 



Grilled Honeydew and Corn Salsa

¼ honeydew, de-seeded and cut into slices
¾ cup corn kernels (frozen or fresh)
1 roma tomato, diced
½ red capsicum, diced
1 jalapeno, finely diced
1 tsp balsamic
Salt and pepper to taste

Grill the honeydew on the three big sides for 1-2 minutes per side.  Cut into smaller pieces when cool enough to handle. Toast the corn kernels for 3-5 minutes per side. Set aside to cool.

Add all the chopped vegetables together, mix in the balsamic and season.

Signs of Summer - Smokey Chipotle Eggplant and Mango with Black Coconut Rice



One of the signs of summer starting for me is when The Nanna Shop starts selling bags of mangoes. No more paying $4 each for them. Naturally, the first time you see them, you buy a bag. You get home and eat one straight away – because you can. And then you decide what to do for the rest. Given I also had a bag of medium eggplants and knowing that smokey chipotle goes amazingly well with them, this dish was born. I made this two days in a row, with leftovers for lunch both days and I’m still not sick of it. In fact, if I had any mangoes left, I’d be having it for dinner again – but with leftover chicken. You can leave out the meat entirely if you want, I just had some leftover so it went in.

The coconut rice can be made with brown or jasmine rice if you don’t have black. The second day I made it with red rice and white beans, just for something different.

The chipotles in adobo sauce can be a bit tricky to find. I spent 2 years trying to track them down in Perth without luck, so on my trip to the states in June, I bought 2 tins home with me. Since getting back, I’ve found them at IGA in Mt Lawley, Kakulas in Northbridge and Fremantle. The Re Store in Leederville sells Chipotle Tabasco as a substitute (which you should buy anyway because it’s AMAZING and goes on everything).

Given the craziness of this time of the year, I haven’t gotten around to much proper photography lately, so this is another Instagram of Yumness.
 


Chipotle Eggplant and Mango
(serves 4 with rice)
1 medium eggplant, 2cm dice
1 small zucchini (or 6 small yellow squash), 2cm diced
2 tomatoes, diced
1 chipotle in adobo sauce, minced
2 tsp adobo sauce
1 cup shredded roast lamb
2 mangoes, flesh diced
1 tsp smoked paprika
½ tsp salt
30mL shot dark rum
1/3 cup water
1 sprig parsley
1 sprig coriander
 

Black Coconut Rice
¾ cup black rice
¾ cup coconut milk
1 cup water
¼ tsp salt
1 can kidney beans, rinsed and drained


First, start the coconut rice. Add the rice, coconut milk, water and salt to a small pot. Bring to a gentle boil, then turn to low and simmer for 30 minutes until rice is tender.

Heat a large frypan to a medium heat. Add the eggplant, zucchini, tomatoes, mangoes, chillis and sauce, salt, smoked paprika, rum and water. Stir it all around to fully coat everything in the sauce. Turn the heat down to low, cover and simmer for 15 minutes. Add the lamb, and heat through for a further 3 minutes or so.

Add the kidney beans to the rice and allow to heat through for a few minutes.

Just before serving, stir the parsley and coriander through the eggplant mix. Squeeze a little kewpie mayonnaise over the top when serving

If you then have any mangoes left, you should definitely give this soufflé a try! Delicious with fresh mangoes on the side

Using Leftovers - Ricotta and Chicken Stuffed Silverbeet



As often as we can, my husband and I try to drive “down south” to Molloy Island. It’s a little residential island in the Blackwood River in the Augusta/Margaret River area. It’s about a 4 hour drive from where I live, so to make it worth it, we’ll only go if it’s for a whole weekend. To make it even more worthwhile, we do what my husband calls the ‘gun down’. As soon as we get home from work on a Friday, we pack the car and ‘gun it down’ that night. We’ll stop for dinner on the way, then usually get to the island just before midnight, leaving us to wake up and have one whole day away. It’s a process that has served us very well. Sometimes it’ll be just the two of us, sometimes we take friends.

It’s become somewhat of a tradition and a joke that Lance will order dinner and then hum and har the entire time we eat it about whether or not to buy a whole BBQ chicken to take away, in case he gets hungry when he gets there. And anything he doesn’t eat can be used the next day. If we don’t have much planned the next day except lazing around the island, I usually let him buy one. If we’re going out for lunch/dinner then I try to talk him out of it – and invariably we’ll get to our house and he’ll be STARVING. But he’s taken this concept in to our everyday world. If we’re in the rare situation of needing to buy takeaway because it’s the only food available to us - he will inevitably steer us towards getting a whole BBQ chicken, so we can also have leftovers. Which is awesome for me. I shred the remainder of the bird and then use it for salads, or sandwiches or soups or tacos or whatever. It’s great having on hand for really quick meals.

We had such a circumstance recently, and after Lance had eaten the wings and a drumstick, the rest of the chicken I shredded, rolled into silverbeet I bought at a market on Sunday and baked with a basic tomato sauce. 10 minutes prep time, 20 minutes in the oven while I showered after the gym and a delicious meal waiting for me.


 
Ricotta and Chicken Stuffed Silverbeet
8 silverbeet (chard) stalks
2 cups shredded cooked chicken
4 small jalapenos (or to taste)
250g tub ricotta
500mL bottle passata
12 olives, pits removed and sliced
2 cloves garlic, minced
2 tsp dried basil
1 tsp dried oregano
1 tsp dried parsley
1/2 cup panko breadcrumbs
1 tsp smoked paprika
Olive oil

Dice the jalapenos really finely. Put the ricotta, shredded chicken and chillis into a bowl and mix really well to combine. Taste for seasoning. Mine didn’t need any as the chicken was already fairly seasoned.

Cut the stalks out of the silverbeet, then place about ¼ cup of the chicken mix at the top of the leaf. Fold the sides over, then roll up to create a parcel. Sort of like you would for a spring roll/rice paper roll. Place seam side down into a long rectangular casserole/lasagne dish. Continue with all of the mixture/leaves until all used up.

In a new bowl, mix the passata, garlic, olives and herbs. Pour over the top of the silverbeet parcels. Sprinkle the top with panko, then sprinkle the smoked paprika over the top of that. Drizzle with a little olive oil.
 
Bake for 20-30 minutes, or until the sauce is bubbly and the breadcrumbs are golden.

Quick Midweek Meals - Chilli Prawn & Grape Tomato Tacos


On the days I have to head to the grocery store on the way home, it takes me forever to decide what to cook that night. Knowing that my options are limited only by what the store has sends my tastebuds into a frenzy. What do they want for dinner? Friday I spent pretty much the whole day changing my mind about what to eat. I wanted steak and chips. I wanted curry. I wanted pasta. I wanted burgers and chips. By the end of the day I was incredibly hungry. And tired. And I couldn’t be bothered going to the shops on the way home anymore. I just wanted to be home and eating. Brainwave. Prawn tacos. I have a few packets of prawns in my freezer for just this occasion. About half an hour in water while you prep everything else and they are thawed and good to go. I have a slight taco addiction too, so there is generally a few packets of tortillas in the cupboard ready to go.

My taco love also includes hot sauce love. In New Orleans, my favourite store was The Pepper Palace – a hot sauce mecca. Given the weight limit on suitcases, my husband and I tasted all of the sauces there and narrowed it down to 10 bottles. All unique and wonderful. The sauce I chose to go with these prawns was a sweeter style as it’s made with peaches. I realise that isn’t available here, so any other hot sauce or salsa you have is good if you want an extra kick – but the flavour of the prawns is enough that it doesn’t really need it.


Chilli Prawn Tacos
300g prawns, shelled
½ tsp chipotle chilli powder
½ tsp ancho chilli powder
2 tbsp Worcestershire sauce
1 tbsp raw sugar
juice from 2 lemons
250g Punnet grape tomatoes
1 red capsicum, julienned
2 sprigs parsley, chopped
2 sprigs coriander, chopped

Put a pan over medium heat, add the tomatoes, capsicum, lemon juice, Worcestershire sauce and chilli powders. Stir fry for a few minutes. When the tomatoes soften, pop them with the end of your spoon/spatula. Add the sugar and mix well.

Add the prawns, cook until pink – around 5 minutes, then stir through the parsley and coriander.

Serve with warm tortillas, greens, pickles, hot sauce of your choice (I went for a sweet style) and a crumbly, salty cheese like fetta

Recreating Deliciousness - Coppelia Calamari with Tamarind Dressing

On my recent holiday, I ate a lot of Cuban. A lot. It started at Bar Pulpo at the Melbourne Airport. And it was good. So rare to get good food at an airport! But I was really impressed. It made the 5 hour plane delay bearable! Then in the states, I went to a restaurant in New York that was recommended to me - Coppelia. And even though it's been two or so months since I've been there, I still consider it one of my favourite restaurants. It's a funky Latin diner style restaurant with ridiculously good, well-priced food. We went to another 4 Cuban restaurants in our trip and loved every single dish. So I came back and wishlisted a few Cuban cooking books on bookdepository (but if you have any recommendations for other good Latin and Cuban cookbooks to add to the list, I'd love to hear). So you can look forward to Skamp's versions of other Latin dishes!
 
Lance and I both fell in love with Coppelia's blue cornmeal crusted calamari with tamarind vinaigrette. We are haunted by it, so I am trying to create an "at-home" version. We don't get plantains in WA (or if you know of a place they're available, please, please, please let me know!!!) so I substituted bananas. Here's a photo of their version:

 
 
I couldn't find blue cornmeal, but I already had some blue corn flour (blue masa), which I used for the flour for the dusting as well as in the coating cornmeal. I get mine from one of my favourite shops in Perth - Kakulas. Using masa for the whole dish makes it naturally gluten free, if that's an issue for you.
 
To make the tamarind dressing, firstly you have to make tamarind syrup. There's a recipe here on my Kale Tamarind Salad recipe. You'll see in the pictures of my version, that it wasn't nearly saucy enough compared to theirs. When I heated the sauce, it reduced right down, so this recipe is double.



My verdict on it's similarity? Well, it's not quite the same, but it's still delicious. But my memory might also be failing me. I think the best thing to do would be to go back to New York to re-acquaint myself with the original!
 
 
Calamari
200g squid rings
1 cup rice bran oil for frying
2 firm but ripe bananas, cut into 3cm chunks

Flour mix
1/4 cup blue corn flour
1/2 tsp salt
1/2 tsp pepper

2 beaten eggs

Cornmeal mix
1/4 cup blue corn flour
1/4 cup cornmeal
1/2 tsp ancho chilli powder
1/2 tsp chipotle chilli powder

Tamarind Dressing
16 tbsp tamarind syrup
8 tbsp red wine vinegar
4 tbsp olive oil
4 tbsp cachaca
salt & pepper to taste

Have the flour mix, egg wash and cornmeal mix in three separate bowls, ready to go. Then an empty plate for the coated ring.

Dip each calamari ring in flour mix, shake to remove excess. Then the egg wash, shake to remove excess. Lastly coat with the cornmeal mix. Then coat the banana pieces in the same way.

Heat the rice bran oil in a wok or frypan - enough to create a shallow layer. Carefully splash a drop of water into the hot oil. If it sizzles, it's hot enough. Without crowding the pan, fry the calamari rings a few at a time, allowing to crispen and darken before turning over. It'll take a few minutes per side.

Place on paper towel lined plate and keep warm. Repeat with all rings until they're all cooked, then do the banana pieces, cooking each side until crispy.

In a separate pan, add all of the dressing ingredients and heat the pan to medium. Stir as it cooks for a minute or two until it reduces into a sticky sauce. carefully put the calamari and bananas in the sauce and stir to coat. Plate up, the drizzle the remaining sauce over the top.

Served here with a bean sprout, coriander, ginger and peanut salad.

Comfort Food - Avocado Soup

Have I told you about "The Nanna Shop" before? I'm not sure, but it's very likely as I shop there all the time. It's actually called Cannington Fresh Markets, but my nanna used to live just down the road from there. Growing up, my siblings and I used to walk with her down to The Nanna Shop to buy her a newspaper and us some lollies. It's changed a lot over the years, it used to have a butcher and bakery inside the store but now it's just the one big shop. It has lots of good fresh produce, imported sauces, tinned goods, continental fare, cheese and smallgoods. Usually, if a recipe calls for a slightly left-of-centre ingredient, my first port of call to try find it is The Nanna Shop. Funnily, now my husband and his sister, along with various friends and even my work receptionist now refer to it as The Nanna Shop as well!

The main reason I shop there frequently is for the fruit and veg. And one of the best things they have a buckets of produce at the back of the store. If you can use it, these bulk buy buckets are excellent value. Especially for those things that are a little on the expensive side normally, like mangoes, mushrooms and avocadoes. Usually the produce in the buckets are slightly smaller than what is normally sold in the per kilo section, but is still excellent quality. As summer approaches, I always head straight to the back first, hoping that mango season has started. It's one of my signals that summer is on it's way.

One thing I always buy there is bags of avocadoes. Always. I love avocadoes. Occasionally, I end up with too many and the two of us can't finish them before they've gone a little too soft. Which is where this soup came in. Creamy and subtle and oh-so-easy, this is a great vegetarian soup by itself, or as served here, awesome with the chipotle chicken as an extra kicker. Especially in this got-cold-again weather. And it would be remiss of me to not mention that crispy bacon would then make it a Vegetarian Recipe Improved By Bacon.

The wine in the last photo is from Darlington Estate. I highly recommend you eat there at some point. Awesome food.



Chipotle Chicken
2 chicken thighs
1/4 cup chipotle sauce
1 tbsp rice bran oil

Avocado Soup
adapted from here
1 tbsp rice bran oil
1 onion, finely chopped
1 garlic clove, minced
5 cups vegetable stock
3-4 small ripe avocadoes
2 stalks silverbeet, centre white bit removed and shredded.
Handful coriander leaves for garnish
2 jalapenos, sliced, for garnish

Pour the chipotle sauce over the chicken thighs and allow to marinade for 20 minutes or so. Heat the oil in a frypan, BBQ or grill and cook the thighs until done, about 5 minutes per side. Set aside, but keep warm.

Heat the second lot of oil in a pot over a medium heat. Add the onion and cook until translucent. Add the garlic and cook another few minutes until very fragrant.

Add the stock and bring to the boil. Reduce heat to low, add the silverbeet and simmer for 5 minutes. Take off the heat.

Add the avocado and blend the whole thing with a stick blender until smooth. Return to a low heat and simmer for 5 minutes, or until warmed through.

Slice chicken, then put in the bottom of the serving bowls and pour the soup over the top. Garnish with jalapenos and coriander.

Serve with corn chips, if desired.

You Only Get One - Mexican Hot Chocolate Snickerdoodles

These are my husband's favourite biscuits. We both love the choc/chilli combination, so when I came across this recipe a few year's back on MlovesM blog, I gave it a go almost immediately. From first bite, my husband was obsessed. I've told you before that he takes biscuits to work for lunch - well, this is the biscuit that started it. He would call me from work and claim I hadn't given him any, because he'd eaten them all before lunch time. He would tell everyone that would listen that these were the most amazing biscuit in the entire world, that you'd have one and just constantly want more. That he was torn, between wanting the wholed world to taste them, but wanting to keep them all for himself. So he came up with a compromise - you only get one.

Just before he'd give someone one of these biscuits he'd tell them he was going to give them the best biscuit ever, but you only get one. You will only ever get one. And that's all they ever got. So, if you want more than that, you'd best make them yourself.

These are best baked just until cracking point, that way when they cool, they are slightly fudgy on the inside and crisp on the outside. My husband told me to point out that these biscuits are also one of the few he's ever eaten that are best eaten cold, not warm from the oven. This last batch I made with spelt flour, to increase the nutritional value. I haven't used spelt much before, but have read that you need to be a bit more careful with it, so when mixing the wet and dry, do it gently and stop as soon as it's completely mixed. Taste, texture and cooking-wise, they were identical.

As a disclaimer, I don't necessarily think these are the *best* biscuit in the entire world, but they are in my husband's world and they are pretty delicious!



Mexican Hot Chocolate Snickerdoodles
(makes about 24)
1 and 2/3 cups spelt flour
1/2 cup cocoa powder (I use Cadbury Bournville Cocoa)
1 tsp bicarb soda
1/2 tsp cinnamon
1/2 tsp cayenne pepper
1/4 tsp salt
1/2 cup grapeseed (or other neutral) oil
1 cup white sugar
1/4 cup pure maple sugar
3 tbsp milk
2 tsp vanilla

Sugar coating
1/3 cup white sugar
1 tsp cinnamon

Preheat oven to 170C

Whisk together flour, cocoa powder, bicarb soda, cinnamon, cayenne and salt.

In another bowl, whisk together oil, sugar, maple syrup, milk and vanilla. Pour this mixture into the dry ingredients, stirring gently with a wooden spoon until just combined.

In a small plastic container or jar with a lid, combine the cinnamon and sugar and shake to combine. Your biscuits will be dunked in this, so if you can't use it straight from the container, spread it back out in a shallow dish. I always have a container of cinnamon sugar ready for making these snickerdoodles!

Roll dough into small balls, then gently flatten into discs around the size of the biscuits you want. Gently push one side of the disc into sugar coating. Then place sugar side up onto lined baking trays. They spread a little, so give them room.

Bake until the cookies have spread and are crackly on top, around 9-12 minutes. Cool, then eat!


These also make amazing ice cream sandwiches!

Quick Meals - BBQ Black Bean Pizza Sauce

In my mind, there are two things that make or break a pizza. The sauce and the cheese. If you get these two elements right, then the pizza will be good. The cheese is fairly self-explanatory - above all it needs to melt well. The sauce has to be the right amount of tangy, and there needs to be a decent enough amount of it. Normally I will make my own sauce out of passata, herbs, chilli and salt and pepper, but I was in the mood for something a bit different. Knowing I wanted pizza for dinner, and that we had a leftover steak from the night before that had been marinated in a Spur's Grill Basting that was going to form the meat portion of the toppings, I thought a BBQ pizza sauce was the go.

Lately, one of my favourite things to make is bean dips. Usually chick peas, white beans or a combination of the two are my go-to canned goods for dips. Just throw a tin in the food processor with a touch of oil, then some flavouring ingredients (sun-dried tomatoes, chilli and Italian herbs is a favourite) and you've got a delicious dip for pop-around visitors. I thought I'd use this as a base for my pizza sauce to ramp up the vege content of dinner without overloading the pizza with too many ingredients. The hickoryness of the sauce made me think more of Southern and Mexican style dishes, so I figured black beans was more the go.

I always have some Lebanese loaves in the freezer for use as pizza bases, but feel free to use whatever base you choose. The toppings were simple, and what I had to hand - steak, corn kernels, zucchini and jalapanenos. These are all interchangeable - remember, it's all about the sauce and the cheese. And the cheese I had was a Provolone. Most of the cheeses I use for cooking are made by Borrello Cheeses. I'm particularly fond of their romano, pecorino, provolone and bocconcini. Provolone melts perfectly and is my go-to pizza cheese.

The resulting pizza was amazing. A tangy, thick and creamy tasting sauce topped with freshly shaved provolone cheese. Add a glass of red wine, and it's the perfect cold night after a long day at work's meal. Notice the paper-lined trays - dishwasher still not replaced!






BBQ Black Bean Pizza Sauce
(makes 4 individual pizzas)
1 tin black beans
3/4 cup BBQ sauce of your choosing (I used Spur's Grill Basting, but would recommend any hickory flavoured one)
4 lebanese loaves
1 steak, cooked to your liking and thinly sliced
Half zucchini, thinly sliced
1 cup corn kernels
4 jalapenos, thinly sliced
1/2 Provolone cheese, thinly shaved

In a processor, blend the tin of black beans and BBQ sauce. Check for seasoning and consistency. It should be spreadable.

Spread a thick layer onto your lebanese loaves. Preheat oven to 180C.

Scatter over your chosen toppings, add cheese last.

Cook for 20 minutes or so until cheese is golden and melted.

Mixed Greens, Pear and Goat's Cheese Salad with Chocolate Chilli Dressing

I wish I'd come up with this idea on my own, it's something I'd be super proud of. It's a weird, but elegantly simple idea. After all, salad dressings are basically a mix of oil, acid and sugar - why shouldn't that sugar be chocolate? But I'll be honest and say that this recipe was adapted from an idea I saw on the Hershey webpage. As part of that holiday I mentioned in my last post (the one that means this photo is also a phone photo - so bad I'm almost ashamed to put it up, but the salad was so delicious I'm willing to put it out there), my husband and I are taking a quick trip out to Hershey, PA. That's right, a whole town built by a chocolate company. With a theme park. Chocolate and roller coasters! Perfect, right?

So anyway, I was doing a bit of browsing on their website and came across a recipe section with a chocolate and chilli salad dressing. I simplified their recipe down to the basic 3 ingredient rule, then added chilli. I figure easier is better for a weeknight, and it'll give me a good base to start experimenting with. And it was awesome. Seriously. Awesome. I used Cottees chocolate sauce because of availability in Australia and price point. But feel free to use Hershey's, or a more natural, virtuous chocolate sauce.

I served this as a side salad for dinner, but I'd definitely serve a larger portion with a big juicy pork steak to turn it into a main meal salad. And, at the risk of getting sick of my own cliche...it'd also be really good with crispy bacon bits. Vegetarian dish improved by bacon. In fact, so many things would go well with this dressing!

The dressing is also pretty strong, you only need a drizzle of it, rather than to full-on 'dress' the salad. For two people, I used 2 tbsps of the dressing. The salad ingredients all depend on how much you intend to serve.

There was also a recipe for a savoury chocolate soup I'm keen to try when the weather cools down further - I'll keep you posted!




Mixed Greens, Pear and Goat's Cheese Salad with Chocolate Chilli Dressing

3 tbsps chocolate sauce
4 tbsps coconut oil
3 tbsps apple cider vinegar
1 tsp chilli powder

Mixed salad greens
1/2 buerre bosc pears, very thinly sliced
pine nuts
1/4 brown onion, diced
2 tbsps corn flour
oil for frying
goat's cheese, crumbled

Put all the dressing ingredients in a jar with a tight lid and shake!

Toast the pine nuts in a medium hot pan. Toss the onion in corn flour, then heat the oil in the same pan, and fry until brown and crispy. Put on paper towel to drain and cool.

Arrange greens, pear slices and goat's cheese in salad bowl, top with crispy onions and pine nuts, then drizzle the dressing over the top.

Instagrams of Yumness - Moroccan Carrot, Cauli and Ruby Red Grapefruit Salad‏



So, I've been pretty slack with the photographs lately - so you'll only be getting phone pictures for a while. Sorry about that.

I've been somewhat pre-occupied with researching and booking our upcoming holiday, so everything else has fallen by the wayside.  Seriously, so excited! At times like this, my memory is even worse than usual. Do you ever buy a specific ingredient with a specific dish in mind - then completely forget why? I do. All. the. time. I bought some ruby red grapefruit last weekend. I can only imagine that it was for some form of salad, given that it got back up to 37C, despite being April. I can't remember what I planned to pair with it, but a salad still seemed like a good idea.

Lately I've been wanting Moroccan flavours. I haven't had a great deal of Moroccan cuisine (despite being in love with my tagine and using it to cook everything), but I had leafed through a Moroccan cookbook a few weeks back and thought that they would go well with the grapefruit. A lot of recipes call for harissa paste, which I knew was a chilli paste of some description, but I didn't know the specific flavours. I found a recipe online and gave it a go, using it as a rub on a slow-roasted lamb leg but I can't say that I was all that excited by it. I decided to try a commercial one, to see what it was 'supposed' to taste like. Much better. Zesty, with a decent residual heat. Cumin and caraway stronger than the one I made. Perfect for a salad dressing. I added honey for sweetness, herbs for freshness, crunchy veges and some seeds for texture.

Quite impressed with the results. Fresh and spicy at the same time. Really easy to prepare as the food processor does all the work. Perfect salad for a warm night. Paired beautifully with steaks. Next time, I would consider adding some fetta or goats cheese and toasting the seeds.


Moroccan Carrot, Cauliflower and Ruby Red Grapefruit Salad

Half head cauliflower
4 small carrots
4 big sprigs flat leaf parsley
4 big sprigs basil
4 big sprigs coriander
handful pepitas
1 tbsp white sesame seeds
1 tbsp black sesame seeds
1 red grapefruit

2 tsbp harissa paste
2 tbsp honey
2 tbsp grapeseed oil
1/4 tsp salt
2 tbsp grapefruit juice

shaving of pecorino to serve

Break the cauli into florets, and put it through the processor, pulsing until it resembles rice. Put it in a bowl big enough to hold the whole salad. Do the same with the carrots, add to the bowl. Do the same with the herbs, but leave slightly bigger.

Segment the grapefruit, breaking it up over the bowl of the processor to catch the juice. Break the segments into small pieces and add to the bowl of vegetables. Add all of the seeds, and fold together, mixing thoroughly

To the grapefruit juice in the bowl of the processor, add the harissa paste, honey, grapeseed oil and salt. Blend to combine, check for seasoning.

Pour dressing over the vegetables and mix thoroughly, then serve with pecorino. As I said, next time I'll use fetta or goat's cheese.

Food Inspiration - Once Upon a Time with Beef Pibil

Food inspiration can come from absolutely anywhere. Have you seen "Once Upon a Time in Mexico"? It's got Johnny Depp in it, of course you have! In it, his character says that he orders Puerco Pibil in every dive he goes to in Mexico, ordering it with tequila and lime. There's a sort of pivotal point he makes in relation to the dish, which I won't go into on the off-chance that you haven't seen it. But consequently, the dish is deemed significant enough for the recipe to be included on the DVD. Awesome, right?

Knowing my husband's love of food & tequila matching, I surprised him one day around 5 years ago by making this slow-roasted pork dish. Well, as close as I could (I couldn't find annatto seeds or banana leaves). It was pretty darn good. It's a pretty specific hot/citrussy flavour that both of us end up craving from time to time. You know something I realised just not - a lot of my food cravings are things that are either slow-cooked or have ingredients that I don't ordinarily have on hand - convenient :/). My husband has to work on public holidays, so consequently I often end up making slow-cooked or complicated dishes on these days. So I have time to make them and he gets to come home to something awesome. Win-win!

Last public holiday, I decided two things. I was *finally* going to make my own tortillas. This was something I was putting off until weekends because the idea seemed time consuming - but then our weekends were so full that it still never happened. I am absolutely addicted to tacos at the moment, so it just makes sense for me to make my own tortillas. And two, I wanted to make Puerco Pibil to go in those tacos. With tequila and lime on the side. I didn't have any pork in the house, but i did have a big lump of beef. I thought that beef would stand up to the flavours just as well. So, Beef Pibil? I chucked it all in the slow cooker, made some fresh guacamole, a fresh tomato and nectarine salsa to kick in some sweetness, a few crispy veges in my own homemade corn tortillas. Now, who wouldn't want to come home from a hard day's work to eat that?



Beef Pibil
1.5kg beef gerello
2 tsp cumin seeds
1 tbsp peppercorns
1/2 tsp whole cloves
8 whole allspice berries
1 tbsp salt
2 green chillis, finely diced
2 jalapeno chillis, finely diced
1/2 cup orange juice
1/4 cup white vinegar
1/4 cup apple cider vinegar
8 garlic cloves
juice of 5 lemons
shot of tequila (I use a reposado for cooking)
half tin black beans - optional

Cut the beef up into chunky dice, or i just sliced into fat rings that would be just submerged in the braising liquid. Grind the spices in a mortar and pestle. Mix all the liquids together in a bowl, stir the spices in.

Throw the beef and braising liquid into your slow cooker, then cook on high for 4 hours, turning occasionally. When the beef is tender, use two forks to shred, then continue cooking for an extra half hour with the lid off to cook off some of the liquid. Add the black beans, if you're using them.



Tomato & Nectarine Salsa
2 large, ripe tomatos
2 small, ripe nectarines
splash of red wine liqueur vinegar
hot sauce to taste
chopped coriander
chopped basil
chopped flat leaf parsley

Everything here is basically to taste, chop it up, mix it up. Let it rest for half an hour or so for the flavours to infuse while you make the tortillas.



Corn Tortillas

As per the recipe in this book, bought for me by the lovely Jasmine  
3 cups tortilla flour
3/4 tsp salt
2 1/2 cups warm water

Mix the flour and salt together, add the water and mix with your hands, kneading it to become a firm dough. This is only a minute or so. The dough should be slightly sticky, and leave a light film on your hands. Cover with plastic wrap and allow to rest for at least 5 minutes.

Take small balls of dough (around 2 tbsps) , roll out disc-like between two sheets of baking paper. Try make it as even thickness as possible.

In a frypan heated to medium, carefully place the tortilla onto the pan. Flip over after around 30 seconds, then again after 30 seconds. Both sides should be slightly coloured. Put on a plate and cover with a clean tea towel to keep warm.

Repeat with all the dough.
